A healthy chicken recipe you can be excited about!

One of my top missions on my weight loss journey has been to NOT diet. I want to eat healthy for the rest of my life, but who wants to constantly feel deprived? That is one of the main reasons most people fail at losing weight. I am constantly looking for ways to enjoy foods that I love, but in a much healthier way. Have you ever thought “oh no chicken AGAIN?!?!” I have – many times. One of my favorite dishes of all time is chicken Parmesan and I have finally perfected a healthy alternative that is just, if not more satisfying! This dish gives you lean protein, complex carbohydrates, fiber, and monounsaturated fat – what more could you ask for?!

This is my favorite chicken dish to make - I was pleasantly surprised at how delicious it turned out!

What you need:
  • 1 pack of chicken breasts (3-6)
  • Special Kay (or any brand) whole wheat/high fiber cereal
  • Extra Light Olive Oil
  • 1/2 cup Egg Whites
  • 1-2 cups Plain Greek Yogurt 
  • Pepper and/or other spices (optional)
  • Low fat Parmesan cheese
Directions:
  • Marinate the chicken in the egg whites and plain Greek yogurt for 12-24 hours (I like to marinate mine for a while to make the chicken extra juicy!)
  • When you are ready to cook, preheat your oven to 425 degrees and thoroughly coat with nonstick spray.
  • While your oven is preheating, pour cereal in a large bowl. Typically you will use about 3 cups of cereal for 3 large chicken breasts (I cut mine in half). Once the cereal is in the bowl crunch it into small pieces.
  • Take chicken breast, ensure it is covered in the yogurt/egg white mix and roll it in the bowl through the cereal, thoroughly coating the chicken.
  • Once it is coated in the cereal, place it on the cookie sheet. top a hint of extra light olive oil, pepper (optional), and low fat Parmesan.
  • Bake for 30 minutes (if chicken breasts are thick you may want to cook for longer)
