Low Carb Protein PB2 and Jelly Cookies

I have fallen in love with my new cookie recipe. It is absolutely delicious and so easy to make! These babies are low in calories and VERY little carbs. These are PB2 and Blackberry jelly protein cookies.

Here is what you need:
  • 1 cup of PB2*
  • 2 tablespoons of no sugar/high fiber blackberry jelly*
  • 2 scoops of protein powder (for this recipe I used strawberry... yum!)
  • 15 packets of Stevia sweetener
  • 2/3 cup of Unsweetened Vanilla Almond Milk
Directions:
  • Spray cookie sheet thoroughly with nonstick spray and preheat oven to 350 degrees
  • In a medium or large bowl, mix all of the ingredients until batter is thick, but well blended. Ensure it has a smooth, creamy texture.
  • Mold into small balls and place onto cookie sheet (or you can just use a spoon to pour the batter into the circles; that is what I do). This recipe usually makes about 16-18 cookies.
  • Bake cookies for 10-11 minutes then let them cook for about 10 minutes and enjoy!
*PB2 is powdered peanut butter. It has MUCH less calories, sugar, and fat. I always recommend that now instead of peanut butter. You can now buy PB2 in a lot of nutrition and health stores, Earthfare, and Whole Foods. It is also available online.
*Sugar free/high fiber jelly can be found in Earthfare and Whole Foods. I have also seen it in Harris Teeter as well.

The nutrition for these cookies can vary depending up brands used and size of cookies, but the calories are approximately around 35, the carbs 1.5 g, sugar 1g, and protein 7g.
