Guilt Free Protein Cookies Recipe

Delicious and guilt free peanut butter, walnut, and chocolate chip protein cookies!
Protein, fiber, complex carbohydrates, good fats - these cookies are perfect for any time of the day!

Here is what you need:
2/3 cup of PB2*
1/2 cup of water*
2 tablespoons of unsweetened applesauce
1 egg white and 1 egg
1 and 1/4 cups of plain oats (old fashioned or instant)
2 scoops of vanilla protein (or half a cup)
12 packs of Stevia sweetner
1/2 tablespoon of baking soda
--Optional 2 tablespoons of semi- sweet chocolate chips and/or 1/2 cup of walnuts
Note: Chocolate chips and walnuts are my favorite combinations for cookies. But you can alter this recipe to cater to your personal tastes. You can use raisins, pecans, almonds, coconut, fruits, and/or more! 

*I recommend using peanut flower or powdered peanut butter (PB2). It has much less calories and fat and is extremely affordable. I will have a link up shortly that you can purchase it from. You can also use a cup of peanut butter if you do not want to use the above. If you use peanut butter DO NOT add water.

Here is what you do:
1.) Preheat over to 350 degrees. Use a cookie sheet, line it with foil, spray generously with nonstick spray and set to the side.
2.) In a medium to large bowl add the PB2, water, egg, egg white, and applesauce. Stir all of the ingredients until batter is smooth.
3.) Add the oats, protein powder, baking soda, Stevia, and any extras to the bowl that contains your other ingredients. Stir everything until the batter all is blended together. The batter should stay thick.
4.) Mold into cookie balls and place on the cookie sheet. This recipe usually makes 8-12 cookies, depending upon the size. I usually end up with 10.
5.) Bake for 9-10 minutes, let cool for 10 minutes then enjoy!
